Confession: Sometimes when I drop my husband off at work in the mornings, I stop and get myself a country breakfast burrito from Taco Time.

Maybe it’s just laziness, but they just taste SO good. There’s just something about the combination of tater-tots and country gravy.

I figured if the combo tastes great in a tortilla, I bet it would taste great as a hot breakfast casserole. I was right. This breakfast casserole is great for brinner, brunch, or any meal in between.

We love it any time of day, and it’s the perfect dinner for those crazy weeknights when you feel like each kid has seven different actives every single day.

This meal is a winner, and everyone in the family will love it.

could i make this the night before, then cook it in the morning?

I love this recipe, because you can make it ahead of time. It makes it perfect for holidays when you know the mornings are going to be a little crazy.

You can make it the night before then throw it in the oven when you wake up. It’s quick, simple, and delicious.

We don’t, however, recommend making it more than 15 hours, before baking it. The ingredients can get a little soggy, and it wouldn’t be ideal.

If you plan to make it for dinner, we recommend making it in the morning then cooking it at night, but we don’t recommend making it the night before, then serving it the next evening.

For the best results and the best texture and flavor, we recommend making and baking within 15 hours.

I love the addition of potatoes! Hasbrowns are one of my favorite things so this captures all of my fav breakfast foods in one.~Cherylhttp://snaps-of-ginger.blogspot.com/

  2. Penny says:

    What is country gravy?

  3. Cyd says:

It is a lighter colored gravy that is often served over biscuits or chicken fried steak. You can by it in a Schilling Country Gravy mix packet.

  4. Leah Olsen says:

Would it work to make this the night before, or would it be gross?

  5. Cyd says:

It should work fine to make the night before and cook in the morning.

  6. Kayla says:

Leah did you ever make it the night before? How did it turn out? Thank you!

  7. Melanie Kennedy says:

I was wondering if there is a way to get the picture to print smaller. The picture printed is so large that it takes a full page. Some of the recipes have the text to the left of the picture and that works much better.

  8. wesley says:

that is the only way i do it.. do it the night before so that when you wake up, you just put it in the oven for 25-30 mins.. My recipe, i put the bread down first(torn pieces) then sausage, then pour the egg over everything, then top with cheese(you can add mushroom, peppers, etc. to this mix). the egg soaks into the bread over night and gives a good base. cook a little longer if you like a crunch

  9. Hayley says:

How would I modify this to make with already made gravy rather than a gravy pouch mix?

  10. Momma Cyd says:

I'm thinking in step 5 in the recipe card. Just use your gravy in place of the water and gravy mix. Be sure to check it so that it doesn't burn. Watch it closely. We have only made it according to the recipe instructions.
