  2. In the bowl of a stand mixer or a large mixing bowl, whisk together to blend cake mix and baking soda.

  5. On low speed, using an electric mixer with the paddle attachment, or a hand mixer with beaters, gently beat the egg and cake mixture until combined.
  6. To the dough, add in 1 ½ cups sprinkles and stir to mix them throughout the dough.
  7. Use a small cookie scoop to measure out the cookie ball and place each cookie ball on the prepared cookie sheet. Leave about 2 inches between each dough ball.
  8. Sprinkle the remaining sprinkles on top of the cookies
  9. Bake in the preheated oven until they begin to turn brown, about 9 minutes.
  10. Remove the baking sheet from the oven and allow the cookies to cool on the baking sheet for 3 minutes.
  11. Transfer the cookies to a cooling rack to cool completely.
