Making White Cake Mix Cookies
You will want to line your baking sheet with parchment paper to keep the cleanup minimal. It also helps to keep the bottom of cookies from getting too brown.

All of your ingredients will be mixed together in one bowl, and from there you can scoop it out and roll the dough into balls.
You want the dough balls to be equal in size, so it could be helpful to use a tablespoon as a measuring device or using a cookie scoop so that the dough balls remain uniform.
Cake Mix Cookies Ingredients
You’ll need just 5 ingredients to make these Cake Mix Cookies:
-1 box White Cake Mix
-3 egg whites: Instead of using the whole egg, I use just the egg whites so that the color of the cookies stay as close to white as possible
-coconut oil, melted: I use coconut oil instead of butter so that the cookie keep their white color
-Cookie Icing- you can use store bought cookie icing, but I provide a quick and easy recipe below. I added 1/2 tsp raspberry extract and 1/2 tsp coconut extract to mine and it was incredible!
-Valentines Candy &/ or Sprinkles. Because sprinkles are always a good idea!
How to Make Valentines Cake Mix Cookies
Preheat your oven to 350 degrees and line a cookie sheet with parchment paper. Set aside.
Using an electric mixer, combine eggs and cake mix in a bowl. It should look like wet sand.
Add in the melted butter to the cake mix and the egg mixture. Combine until smooth. The dough will be slightly sticky and thick.
Allow the cookie dough to rest for a couple of minutes, this makes the scooping and rolling much easier!
Scoop out the dough and roll each scoop into a ball to help smooth the edges before arranging them on the parchment paper on a lined cookie sheet.
Bake 350 for 8-10 minutes, pulling them out when the cookies are puffy and the tops are no longer glossy. Let cool 3-4 on the cookie sheet, then transfer them to a cooling rack.
Can you freeze baked cake mix cookies?
Yes, you can! I recommend freezing them flat on a baking sheet before transferring them to a Ziploc bag because it will help to prevent them from sticking together. While a giant cookie might be great in theory, it’s inconvenient if you’re grabbing a quick on-the-go snack. You can thaw the cookies on the counter for about 10 minutes before enjoying.

- 1 1/2 cups powdered sugar
- 1/2 tsp vanilla extract

Add the coconut oil to the cake mix mixture. Combine until smooth. The cookie dough will be very thick and slightly sticky.
Allow the cookie dough to rest for a couple of minutes, this will make scooping and rolling easier. Scoop the cookie dough and then roll each ball to smooth the edges before arranging them on the parchment paper-lined cookie sheet.
Bake at 350°F for 8-10 minutes, pulling them out when the cookies are puffy and the tops are no longer glossy. Let cool for 3-4 minutes on the cookie sheet, then transfer them to a cooling rack.
Whisk icing ingredients together until smooth. Add food coloring if desired. Spoon on top of cooled cookies, topping with Valentines candy and sprinkles, if desired.
